Information About

Exploring the fascinating world of Tapai Pulut, a traditional snack made from tapioca or glutinous rice. Did you know that young women during their monthly period are prohibited from preparing it? Tapai Pulut involves fermentation, an anaerobic process releasing energy from glucose without oxygen. Why yeast? Yeast plays a crucial role in both aerobic and anaerobic respiration, and in this case, during fermentation, it produces ethanol, carbon dioxide, and energy. Unveiling the science behind a delicious cultural delight! -- Contributed by Oh William, as part of the "Singapore Makan" Contemporary Collecting initiative. The photograph shows a Tapai Pulut wrapped in rubber leaf and a small piece of banana leaf on the outside and secured with a toothpick at the top. Additional description by Library staff.
