Information About

The old term for Peranakan Food amongst the elderly in the past is Laok Embok Embok. A private dining meal which includes a number of dishes Tulang Babi Masak Buah Keluak - Pork Ribs with Buah Keluak in a Spicy Gravy with Tamarind. This was the meat of choice compared to the Chicken version. As the dish taste better cook one and kept overnight so that the flavours develop. The richness of the nut and the ribs works perfectly well. The soup dish Tahu Masak Titek - Soft Soya Bean Cake in a Spicy Soup clearly shows the start of fusion cooking where a Chinese ingredient in the hands of the local woman paired with a spice paste. For the vegetable dish Ladies Finger with Dried Prawns, Shallots is a tangy Sambal Belachan completes the meal -- Contributed by Lloyd Ignatius Matthew Tan, as part of the "Singapore Makan" Contemporary Collecting initiative.
