A panel discussion that explores how reading moulds the minds of F & B professionals and helped them through their journeys in their specific occupational background. The stories behind the scenes, where the panel describes the why of food breathe life and context into ingredients, dishes and meals.

The session explores their reading diets and is suitable for creative industry types who would have to read. Hear from founders of ComCrop, Empire Eats Group, Papa Palheta & Park Bench Deli on what got them started in the trade, and their transcendence.

About the Speakers

Victoria Cheng, Digital Strategist, F & B Correspondent, Content Producer  (moderator)
Best known for her work as a food journalist and presenter, Victoria’s culinary expertise has been featured in restaurant guides, newspapers, and magazines for nearly a decade. You can also find her in the digital space on Youtube.com/gastronommy or Instagram @victoriacheng.

Allan Lim, Co-Founder of Comcrop, CEO of Alpha Biofuels & Co-Founder of The Living! Project
43 year old Allan Lim is chief executive and owner of ComCrop – Singapore’s first urban rooftop aquaponics farm, located on the rooftop of SCAPE in the heart of Orchard Road. The farm provides fresh produce to establishments such as Raffles Hotel, Shangri-la and other F & B outlets. He is also founder and CEO of Alpha Biofuels. The company converts waste cooking oils into biodiesel.

Howard Lo, Owner of Empire Eats Group
Howard is from the US and started off in the tech industry, working for Microsoft in Seattle and Singapore. In 2009 Howard opened the restaurant, Standing Sushi Bar, which led to new concepts such as Tanuki Raw, Salmon Samurai, and The World is Flat. Howard’s restaurant group comprises 11 locations in Singapore and will be expanding into Malaysia.

Ming Tan,Chef and Food Writer
Ming is a chef-consultant engaged in developing restaurant operations for markets in Asia. He built then ran Lolla's open kitchen for almost three years, helping them garner awards from Zagat, The New York Times and BBC. He was bitten by the entrepreneurial bug and subsequently founded premier sandwich joint Park Bench Deli. He is a food columnist with Esquire Singapore, and in his free time enjoys collecting books and planning his next meal.

Leon Foo, Managing Director of Papa Palheta
Leon, a former equity analyst, decided to pursue his passion in 2009 by opening Papa Palheta - a boutique Specialty Coffee roaster. Since then, he has pushed boundaries in the Singapore coffee scene through his sourcing practices, roasting philosophies and well executed projects, including the more known project called Chye Seng Huat Hardware Coffee Bar. In 2014, Leon expanded his coffee business into Malaysia by opening PULP in Bangsar, Kuala Lumpur. Leon is inspired by his travel, design and the people he meets along his entrepreneurial journey.
